Taco Tuesday Just Got Interesting: Spicy Shrimp Tacos with Green Goddess Slaw
Let’s be real—Taco Tuesday is a lifestyle. And if you’re still eating the same old tacos week after week, it’s time to shake things up. Enter: Spicy Shrimp Tacos with Green Goddess Slaw—bold, fresh, and so ridiculously good you’ll wonder why you ever settled for anything less.
And that Green Goddess sauce? Forget about just using it for slaw—you’re gonna want to drizzle it on everything. Trust me.
What You’ll Need:
🌿 Green Goddess Slaw:
- ½ cup Greek yogurt
- 2 tbsp rice vinegar
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 cup fresh parsley
- 2 scallions
- 2 tbsp fresh dill
- 2 cloves garlic
- ½ tsp kosher salt
- 4-5 cups cabbage, sliced thin
🍤 Seared Shrimp:
- 1 lb shrimp, peeled & deveined
- 1 tsp chili powder
- ¾ tsp kosher salt
- ½ tsp smoked paprika
- ¼ tsp cayenne (for a kick 🔥)
- 2 tbsp olive oil, divided
🧅 Easy Pickled Red Onion:
- ⅓ cup white vinegar
- ⅓ cup water
- 1 tsp salt
- 1 small red onion, thinly sliced
How to Make It:
Step 1: Pickle the Red Onion (Because We’re Fancy Like That)
- In a small bowl, whisk together vinegar, water, and salt.
- Add in the thinly sliced red onions, making sure they’re fully submerged.
- Let them sit for at least 15-20 minutes while you prep the rest.
- Store the rest in a glass jar with a lid in the refrigerator and enjoy them later for up to 2 weeks.
Step 2: Sear the Shrimp (Hello, Flavor!)
- Clean and devein the shrimp.
- In a medium bowl, toss shrimp with olive oil, salt, chili powder, smoked paprika, and cayenne.
- Heat a cast iron skillet over medium heat and add 1 tbsp olive oil.
- Cook shrimp for 2-3 minutes per side, untouched, until they’re beautifully golden. Make sure not to overcrowd the pan.
- Remove from heat and set aside (try not to eat them all before assembling your tacos).
Step 3: Make the Green Goddess Slaw (A.K.A. The Best Sauce Ever)
- In a blender, combine Greek yogurt, rice vinegar, lemon juice, olive oil, parsley, scallions, dill, garlic, and kosher salt.
- Blend until smooth and dreamy.
- Set aside ⅓ cup for drizzling on top.
- Toss the remaining dressing with thinly sliced cabbage in a large mixing bowl.
Step 4: Assemble the Tacos (AKA The Best Part!)
- Warm up some flour or corn tortillas (because cold tortillas are a crime).
- Layer on Green Goddess slaw, seared shrimp, sliced avocado, and pickled red onion.
- Top with fresh cilantro, a squeeze of lime, and an extra drizzle of Green Goddess sauce.
