FUNFETTI SPRINKLE CAKE

This sprinkle filled FUNFETTI CAKE is easy and fun for any celebration! The cake is soft and light and loaded with sprinkles and real vanilla extract, then topped with vanilla buttercream frosting and more sprinkles. This cake just makes you want to smile...and eat more cake!

Vanilla Cake

1 and 1/2 cups cake flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

6 Tablespoons unsalted butter, room temperature

3/4 cup granulated sugar

2 large egg whites

1/3 cup sour cream

1 teaspoon  pure vanilla extract

1/3 cup whole milk

1/2 cup sprinkles

 

Vanilla Buttercream Frosting

3/4 cup (12 Tbsp) unsalted butter, room temperature

3 cups confectioners’ sugar

3 Tablespoons heavy cream

1 teaspoon pure vanilla extract

sprinkles for garnish

 

DIRECTIONS

Preheat oven to 350°F. Grease a 9×2 inch round cake pan or a square 9x9 pan will work as well. You can also double the recipe if you would like to make a larger sheet cake.

Cake: 

Mix the cake flour, baking powder, baking soda, and salt. Set aside.

Using a handheld or stand mixer fitted with a paddle attachment, beat the butter until smooth and creamy, about 1 minute.

Add the sugar and beat until creamed together. Scrape down the sides and around the bottom of the bowl as needed.

Beat in the egg whites until combined, then beat in the sour cream and vanilla extract. Scrape down the sides as needed so all ingredients are combined.

Pour the dry ingredients into the wet ingredients.

Mix on low speed and slowly pour in the milk. Mix on low speed just until all of the ingredients are combined. Do not over-mix.

Fold in the sprinkles.

Pour batter evenly into prepared cake pan.

Bake for around 30minutes or until the cake is baked through. After about 20 minutes, tent the cake with aluminum foil to prevent the top and edges from over-browning.

*To test if the cake is done, insert a toothpick into the center of the cake. If it comes out clean, it’s done!

Allow cake to cool completely in the pan.

 

Frosting: 

Cream butter. Add confectioners’ sugar, heavy cream, and vanilla extract. Beat on low speed for 30 seconds, then increase to medium-high speed and beat for 2 full minutes. Spread frosting. Top with sprinkles.
