Homemade Snickers Bars (gluten free and vegan)

Calling all snickers lovers, what if there was a healthier version of the classic treat? These Snickers bars are easy to make, require no baking, and have no processed sugars. They are also gluten free and vegan! Every bite offers the perfect combination of shortbread, date caramel, crunchy peanuts, dark chocolate and sea salt. This recipe is SO good!

Ingredients

Shortbread layer:
1¼ cups almond flour
2 tablespoons maple syrup
2 tablespoons melted coconut oil

Caramel layer:
6 soft Medjool dates, pitted and torn
¼ cup peanut butter
2 tablespoons melted coconut oil
1 tablespoon maple syrup
2-3 tablespoons of water as needed 

Chocolate drizzle:

1/2 cup dark chocolate chips
1 teaspoon melted coconut oil

Topping:

⅔ cup roasted peanuts
flaky sea salt

 

Directions

Line an 8x4-inch loaf pan with parchment paper.

Shortbread cookie base: In a medium bowl, mix the almond flour, maple syrup and coconut oil until well combined. Press the mixture into the bottom of the prepared pan. Freeze while you make the caramel.

Date caramel: Place the dates, peanut butter, coconut oil, maple syrup, and 1 tablespoon of the water in a food processor. Pulse to combine, drizzling in the remaining 2 tablespoons of water. (Add more water if needed to form a thick, smooth creaminess.) Spread the caramel evenly over the base layer in the loaf pan. Return the pan to the freezer.

Chocolate drizzle: Combine the chocolate chips and coconut oil in a small bowl. Microwave until the chocolate is fully melted and smooth.

Remove the bars from the freezer and top with peanuts, using your hands to press the nuts into the caramel. Drizzle with melted chocolate, top with flaky sea salt, freeze once more to set and ENJOY!!
