This healthy and light chicken salad starts with juicy, finely shredded chicken. I added some celery, red onion, fresh parsley, salt, pepper, a small amount of mayo, and fresh lemon.The lemon really brightens the flavor and gives your chicken salad some zing! Elevated Chicken Salad Recipe

Ingredients:

  • 1½ cups shredded chicken

  • 1 celery stalk

  • ¼ cup red onion

  • ¼ cup chopped fresh parsley or dill (optional)

  • ¼ teaspoon coarse salt

  • ¼ teaspoon black pepper

  • ¼ cup mayonnaise

  • Juice of 1/2 lemon

How To:

  1. Shred and chop the chicken so it’s almost minced.

  2. Add celery, red onion, salt, pepper, lemon juice and any herbs.

  3. Stir in the mayonnaise until well combined. Serve in lettuce cups or on a fresh baguette. Enjoy!
